First, I need to admit that this is one of my absolute favourite restaurants in Amsterdam. However, since we moved away three years ago, I hadn’t been back for quite some time.
Naturally, I had certain expectations of what this evening would be like. Let me tell you right away: those expectations were not only met, they were far exceeded.
For those of you who don’t know Wolf Atelier yet, this is one of the places you simply have to visit if you love food as much as I do and happen to spend some time in Amsterdam—or if you’re lucky enough to live there, as I did for eight years.
This special restaurant is located in Amsterdam West, just a short walk from Amsterdam Centraal Station. What makes it even more unique is that it sits on a former turning bridge. Yes, you read that correctly. You’re essentially dining above the water, with stunning views over the IJ and the A’DAM Tower. The setting becomes particularly magical as the sun sets and the city lights begin to appear.
If possible, I highly recommend reserving one of the high tables next to the open kitchen. Not only do you get a fantastic view, but you also get to witness the magic that unfolds beyond your plate.
We opted for the five-course menu—one vegetarian and one regular—paired with the wine selection. They also offer a BOB pairing (“Bewust Onbeschonken Bestuurder”), which means smaller pours of each wine. This is usually my preference, as I’m much more interested in the flavour combinations and understanding why a particular wine was chosen for a dish than in the amount of wine itself.
You know that feeling when the first course arrives and you think, “Wow, this is a great start,” only for each subsequent dish to raise the bar even higher? That’s exactly what happened here. Every course built beautifully towards the main dish, and somehow they still managed to finish on an even higher note with dessert.
The flavour combinations are mind-blowing, the creativity is remarkable, and every dish is executed with incredible precision. Most importantly, everything is absolutely delicious.
But enough of the introduction—let’s get to the dishes we enjoyed.

green pea, truffle

with verbena, lentil, paprika

opperdoezer, cevenne onion, lavender

salsify, mushroom, green pepper

leche de tigre, jalapeño, courgette

bouillabaisse, fennel, razor clam

albufera, parsnip, sherry

coconut, jasmine, lime leaf
Wow! I mean, seriously—those flavour combinations were sensational.
Each dish brought something unexpected to the table, and every bite made me more excited for the next course. It’s the kind of experience that makes you want to book your next visit before you’ve even finished dessert.
Unfortunately, we didn’t get to see Wolf himself this time, but hopefully we’ll have better luck on our next visit.
A huge chapeau to the kitchen and the entire team. The level of creativity, precision, and hospitality made for a truly memorable evening… again!
